One of the best things about visiting Taiwan as a kid was going to the night markets. I’d play games and stuff my face with good food, and all would be right with the world. It was during these visits when I was introduced to gua bao (pork belly sandwich), one of the staples of night market cuisine.
A good gua bao can be difficult to find the US, especially if you don’t live in a big city. And even when you can find it, it can be expensive—so my mom learned to make her own gua bao so we could have it in the US too.
There’s no dignified way to eat a gua bao. If your feel overcome with the desire to stuff it in your face, do it. Be free.
